I don't really see what you mean about Hermione's "true Gryffindor self" not being revealed yet... I mean, I think she's shown incredible courage and bravery in all five books. Not only is she brave enough to use her brains to take chances... She also is brave enough to tell her friends when she thinks they're not doing something smart... she actually tells Harry that he "plays the hero", which is something not many people would do.
I think Hermione fits in quite well in Gryffindor...
About Harry not asking to be in Gryffindor.. well, I know he didn't explicitly say he wanted to be in Gryffindor, but I think the choices were obviously between Slytherin and Gryffindor... I don't think he could have gotton in Ravenclaw if he wanted to (he's not that intelligent), and I think his bravery would win over his justice/loyalty (even though he is just and loyal, he is more brave) so the choices weren't between all four, really, just Gryffindor and Slytherin.
