There is no eighth book - JKR, her literary agent, her legal representations, everyone has said repeatedly there will be no eighth book - the series is meant to be, and will be, seven books long.
Now, having said that, I could certainly envision a scenerio where other writers write stories based in the "Harry Potter" universe. That, however, will be unlikely; writers tend to want to create their own stories and characters.
Another possible (and unlikely) scenerio would be a "Harry Potter TV show", in which we follow the exploits of another group of students who go to Hogwarts after the end of the seventh book. While I'm sure I can't be the only one who's thought of doing something like that, it would be tricky to pull off, because you would have to gamble on people enjoying "Harry Potter" without Harry Potter; even if some of us are wrong on Harry dying and he survives the last book, he wouldn't be in our hypothetical TV show because he would of left Hogwarts by then.
